The quince is the fruit of the quince tree (Cydonia oblonga). Piriform and voluminous, it is cottony on the surface and, when ripe, it is yellow and very fragrant.

Quinces are hard, astringent and acidic and can only be eaten after cooking.

The fruit is mainly used to make jellies, jams, pastry or cakes. Quinces can also be roasted in the oven, or used in the preparation of lamb or poultry tagines.
