Grey Chanterelle / Girole
The grey chanterelle is a highly sought after species of edible mushrooms from the northern hemisphere, available fresh until early winter.
Its flesh, very famous in gastronomy, has a fine and subtle taste and perfectly accompanies fish, poultry or game dishes served during the holidays.
It is a small mushroom (3-12 cm) with a convex cap (3-7 cm) on young individuals, but which quickly becomes depressed and then funnel-shaped. It is often pierced in its center of a hole communicating with the interior of the foot.
Its color varies from brown to fawn with grayish nuances.
The foot, of bright yellow color is relatively long and thin, flexuous and especially hollow.
