Smoked Cod Roe

Cod Eggs follow very specific preparation steps. They are salted manually with dry salt then hot smoked over oak wood in the smokehouses.

After having passed under the watchful eye of our specialists, the Cod Eggs are vacuum-packed in portions. In their final state, these eggs show a firm structure with an orangey appearance and veins are present on the egg pouch.

Our unique Cod Egg production method provides a delicate smoky taste and an exceptionally tender and firm texture, a true signature of Etablissements JC David.

Known for the preparation of Tarama, Cod Eggs can also be eaten as they are on a slice of toast or used in other dishes for the more inventive.
