History of JC David:
JC David is a family-owned smoking house based in Boulogne-sur-Mer, France, that has been producing traditional smoked herring since 1973. The company's founder, Jean-Claude David, learned ancestral techniques from his mother and established his own business to distribute smoked herring to local fishmongers and renowned Parisian restaurants. The company's commitment to preserving the taste of yesteryear and sustainable management of state-owned forests for oak wood chips has earned them multiple quality certifications, including the prestigious "Entreprise du Patrimoine Vivant" and "Label Rouge". Today, Établissements JC David operates out of restored premises that were once the famous Gaston Seillier workshops.
