Bound Veal Juice

The bound veal juice has excellent rehydration in boiling water and good hold in a bain-marie. Ideal for cold binding, it is recommended as a base for sauces (Madeira, Pepper, Chasseur ...), as a cooking element for moistening red and white meats and for braising vegetables.
