To obtain an exceptional taste, Haddock follows a meticulous preparation that follows to the letter ancestral know-how. First, the fish is salted in brine, a mixture of water and salt. Then follows a dive into annatto, an exotic fruit extracted from annatto whose natural pigment offers, in particular, their characteristic color to Dutch cheeses such as mimolette or cheddar.

After having dried, the fish is delicately positioned in our coresses to be cold smoked. Several hours later, the Haddock reveals its extremely soft and mellow flesh. A feast for the eyes and taste buds. To meet the demand of some great Chefs, it can be prepared without coloring to keep its amber flesh.
